Baton Rouge Distilling Bourbon Barrels
Our concept is to produce small batches of spirits and explore the possibilities of modifying parameters like grain ratio or yeast type, as well as the impact of things we don’t control like storage temperature while aging. Each batch of whiskey we produce is unique and has its own characteristics.

Batch #2: Our First Bourbon

Louisiana BourbonIn spring 2019, we finally produced our first batch of bourbon, using 100% corn, and barreled our spirit in June. After some time spent in oak, it was proofed and bottled at the end of 2020.

Batch #3: Rye Bourbon

Mashed and distilled in early 2020, this recipe is still high in corn, but also has equal amounts of rye and barley. Aging was completed by December 2020 and it was bottled in April 2021.

Batch #4: Rye Bourbon

Produced in the spring of 2020, we kept the same ratio of grains as batch #3 but tweaked the yeast profile. This bourbon rested in its oak vessel until mid-March 2021 and was bottled in April 2021.

Batch #5 and #6: High Rye Bourbon

Issued from the same recipe, a variation on batch #4 where we reduced the corn and doubled the rye. We split the white dog into two separate "identical" oak barrels, not planning on blending them. Both were mashed, distilled, and barreled in 2020. Batch #5 was unbarreled in September 2021 after 13 months of resting, while batch #6 was unbarreled in January 2022 after aging 18 months, thus offering the possibility of comparing the effect of time on the taste of different casks.

Batch #8 and #9: High Rye Bourbon

Issued from the same recipe, a variation on batches #5 and #6 where we tweaked the proportions. Both were mashed and distilled in 2020 and barreled in January 2021. Both were emptied in February 2023. Those are our first bourbon batches offered in 750 mL bottles.

Batch #11 and #12: High Rye Bourbon

Produced using the same recipe as batches #8 and #9 but barreled at a lower proof. Both were mashed and distilled in February 2021, barreled in March 2021, and emptied in April 2023.

Batch #14 and #15: High Rye Bourbon

Produced using the same recipe as batches #11 and #12. Both were mashed and distilled in April 2021, barreled in May 2021, and emptied in September 2023.

Batch #17 and #18: High Wheat Bourbon

Produced between May and June 2021, we experimented with a new mash recipe containing 30% red wheat. Both were barreled in June 2021.

Batch #19 & 20: Wheated Bourbon

Produced between June and July 2021, we kept the same ingredients as batch #17 and #18 but reduced the red wheat content to 15%. Both were barreled in July 2021.

Batch #23, 24 & 25: High Rye Bourbon

Produced between October 2021 and January 2022, we kept the same ingredients as batch #14 and #15. All were barreled in January 2022 in 5-gallon barrels instead of the 15-gallon ones we've been using.
